Aji Dulce is a sweet snacking pepper that's taking over for the Gypsy Queen (now retired). Why did Aji Dulce take over? Production and flavor. It's that simple.
Aji Dulce is botanically classified as Capsicum Chinese, so it's related to scotch bonnets...but it has NO HEAT! So if you love the fruity flavor profile of scotch bonnet peppers but you're looking for something without the sizzle, Aji Dulce is for you!!
Favorite uses for Aji Dulce: pickled, hot sauce, added fresh to scrambles, soup, pretty much everything. The flavor is sweet and adds some oomph when you're using other peppers. They can be picked green for a sharper flavor, or red for a sweeter, more mild taste. Aji Dulce is popular across Latin American and the Caribbean as a component in many condiments, such as salsa and Puerto Rican sofrito.
These peppers have a variable shape ranging from cube-like to the classic scotch bonnet "hat" shape. Plants can get pretty tall, ranging from 24-48" in height, given the right growing conditions. In 2025, my plants averaged about 36-40" when planted in the ground and amended with Dirt Hugger compost.

Peppers thrive in full sun and well-draining, fertile soil. Mulching at the base of the plants will ensure good soil retention (and weed suppression) throughout the growing season.
